The ingredients are the starting point for everything that happens in this cuisine. The produce we use determines each dish: locally sourced, traditional, what comes from the land, the sea or the sky, with the quality and respect it deserves.
Those of us who believe in traditional cuisine as the essence of our profession know that it is not just a matter of technique, but about memory, standards and gratitude towards those who have come before us so that today we can cook in this way. This conviction translates into dishes on the restaurant’s à la carte and set menus that show respect for their ingredients and make them shine with a modern, personal and sincere approach.

This tasting menu has been devised to allow each particular dish or main ingredient stand out from the rest and to reflect both the style and personality of Juan Carlos Ferrando. Owing to its complexity, it is served to full tables only, with a maximum of six diners. It is offered with two wine pairing options: Special (5 glasses, €50) or Premium (€90 per guest).

An executive menu shaped by the customer, the market and time. The dishes are changed weekly based on the availability of ingredients, and the menu is devised as a varied, honest and well-rounded offering.
